Enchilada Sauce

Yummy enchilada sauce!

6 Tablespoons of Canola Oil

2 Tablespoons of Flour

1/3 Cup grated Onion (or very finely chopped)

1/2 Cup Chili Powder

2 Cups Chicken Stock

2 Cups Beef Stock

2 15 oz Cans of Tomato Sauce

1 Teaspoon of Dried Oregano

1-2 teaspoons of Cumin

1/2 – 1 Teaspoon of Salt

Heat oil, add flour and cook for 1-2 minutes till smooth. Add chili powder and cook for 30 seconds until smooth. Add stock, tomato sauce, onion and spices. Simmer for 15 to 30 minutes. Serve on enchiladas. (Or eat on corn chips.)(Or eat with a spoon.)(Or simply drink from a coffee cup.)
